Quick tomato soup recipe

This tomato soup recipe is a great standby, perfect for serving in little cups with cheese on toast

The chilli sauce is optional, but often popular with even small children.

SERVES

Makes four little cupfuls or two bowlfuls

INGREDIENTS

  • 1 tbsp butter
  • 1 clove garlic
  • 400g tin of tomatoes
  • 1 tbsp tomato purée
  • A shake of sweet chilli sauce (optional)
  • Nutmeg (optional)

METHOD

Melt the butter in a small pan and crush in the garlic.

Allow to cook gently for a few seconds, then tip the tomatoes into the pan, along with the tomato purée, about 8 fl oz/225ml water, and shake in some chilli sauce.

As it heats, whizz it with a hand blender until smooth. Don’t let the mixture boil if you can avoid it.

Season lightly with a grating of nutmeg.
