13 Ways to Actually Use a Head of Cabbage
Every now and then, I wind up with a head of cabbage in my fridge. I always have the best of intentions when I buy it. I'll plan to use it for a slaw, then some kind of healthy casserole. But when push comes to shove, I end up throwing away at least half of it.
It seems like a great idea when I'm at the supermarket. It's cheap, healthy, and a single head yields several servings. But then I get home and realize that, even though it looks low-maintenance, it's not as low-maintenance as I'd like. Because it's packed with fiber, it's super dense and chewy. That means that, much like other rough greens, it often needs some TLC if you want it to taste like anything other than rabbit food. So, no, I can't just go throwing it into any old recipe like I'd hoped.
All of that doesn't mean it isn't easy to use, it just means you need some cabbage-friendly recipes on hand. Instead of letting my cabbage wilt and shrivel in my crisper drawer like I normally might, I'm resolving to actually use it from now on. With the help of one of these 13 recipes, you too can put it to good use. These ideas range from straightforward and simple (think salads and coleslaw) to the truly ambitious (why hello, stuffed cabbage and sauerkraut). Whichever you choose to bookmark, know that from now on, you'll never be short on excellent cabbage recipes.
