Magic cake has actually been around for years, but we've been noticing these miraculous recipes that transform one easy-to-make batter into three distinct layers pop up all over the internet everywhere from Instagram to Pinterest.

So what makes this cake so magical? We know what you're probably thinking…no, drugs aren't involved. But there is food wizardry at work here. From one batter baked in one pan you get three distinct layers of cake: a spongy layer of cake on the top, a creamy custard in the middle, and a dense fudge-like layer on the bottom.

While magic cake uses normal cake ingredients—eggs, sugar, butter, flour and milk—the "magic" comes from how you combine them. The thin crepe-like batter is baked at a low temperature (think 325°F), which gives the ingredients time to separate into the three layers as it bakes. You get the fudge-like texture on the bottom from mixing the egg yolks and flour together, and the middle turns into custard because the milk to flour ratio is higher than most cake recipes. And that fluffy cake layer on top? That comes from the whipped egg whites floating to the top of the batter and baking last.
